According to data from the U.S. Department of Energy, induction cooktops are up to three times more efficient than gas stoves, and up to 10% more efficient than electric ranges. The new guide starts by explaining how the induction cooking technology works. Unlike traditional gas or electric cooktops that rely on direct heat transfer, induction cooktops heat the cookware directly through electromagnetic fields. The induced current leads to the generation of heat in the cookware itself, while the surface of the cooktop remains relatively cool. In addition to faster and more efficient cooking, this reduces heat loss and saves energy.

“Induction cooktops are about 84% energy-efficient, while gas and electric stovetops lag behind at 40% and 74%, respectively,” says Neal Helman, the author of the guide. “Induction cooktops do not emit pollutants like gas stoves do, making them a cleaner choice for both the environment and your kitchen. When you pair an induction cooktop with renewable energy sources like solar or wind power, you’re cooking in the most eco-friendly way possible.”

Induction cooktops only work with cookware that is made of ferrous metals, such as cast iron and magnetic stainless steel. When choosing suitable cookware, the company advises readers to look for the induction-compatible symbol or use a magnet to test it. The guide also offers additional tips for more eco-friendly cooking, such as choosing cookware with a flat bottom, matching it to the size of the induction element for more even heat distribution, and keeping lids on pans during cooking.

The guide goes on to explain that while induction cooktops typically have a higher price, their practical benefits, durability, and energy savings generated during their use make them a more cost-efficient choice in the long run. Due to the simplicity of the technology, they are also easier to maintain than gas or electric stoves and have a longer useful life, which means less waste ends up in landfills.
